Quick ,easy and tasty  idly fry masala recipe  for breakfast and snacks that is made with leftover idlis.The tasty masala is made from onion, tomatoes with flavour of  maggi masala.You can use regular idli or mini idli to make this breakfast or snacks.This is a perfect way to use leftover refrigerated idlis.

Whenever we make idli.It is sure that we will have some leftover.I have used idlis which had been refrigerated for a day.You can also use fresh idlis.

  • 6-7 regular medium size idlis
  • 2 tablespoons oil
  • 1 medium onion( finely chopped)
  • 1 medium to large tomato(finely chopped)
  • 1 green chilli
  • 1/2 teaspoon ginger garlic paste or 1/2 inch ginger +4-5 garlic crushed to paste in a mortal- pestle
  • 7-8 curry(bay) leaves
  • 1/4 teaspoon mustard seeds
  • 1/4 cumin seeds
  • 1 pinch turmeric powder
  • 1/4 red chilli powder
  • 2 tablespoons water
  • 1/2 maggi masala
  • 1/2 teaspoons lemon juice
  • salt to taste
  • 2 tablespoons chopped coriander leave




Preparation for Leftover Idly fry masala

  1. Cut the idlis into bit sized pieces and keep them aside.
  2. Finely chop 1 medium size onion and  1 medium to large size tomato.keep them aside.
  3. Also chop 1 green chilli. keep aside it.

Making Leftover idly fry masala

  1. Heat 2 tablespoons oil in a pan .add 1/4 mustard seeds and cumin seeds in a pan and let them crackle.
  2. Add curry leaves.cook them for a 2-3 sec.
  3. Add chopped green chilli.mix well and cook 10 sec.
  4. After that add 1/2 teaspoon ginger garlic paste. Saute till the row aroma of ginger garlic goes away.
  5. Then add finely chopped onion.
  6. stir well and saute till onion turn in light brown.
  7. Now add finely chopped tomatoes and mix well.
  8. Saute till tomatoes soften.that time mash them using spatula and make it pulpy.
  9. Add 2 tablespoons water and mix well.
  10.  Add pinch of turmeric powder,1/4 red chilli powder,1/2 teaspoon maggi masala, salt as per taste.
  11. Mix well. cook the gravy on a low flame for 2-3 mins.
  12. Now add chopped idlis.Mix properly so the masala is coated to each and every pieces.
  13. Lastly squeeze the lemon juice and add chopped coriander leaves.
  14. Stir well and serve.
